What Defines a "Craft" Beer?
The Beer Judge Certification Program (BJCP) currently lists 23 different beer styles in their guidelines (excluding meads and ciders). Each style is unique and each brand is one of a kind. Craft beer brewers are typically defined as small, independent brewers who generally make their beers with traditional ingredients (malted barley, hops, yeast and water) but may also use non-traditional ingredients to create distinctive and individual brews.
Aging and Cellaring
Many beers can benefit from prolonged storage. Strong Belgian ales, barleywines, imperial stouts and sour Belgians, like lambics, can be successfully aged. By aging certain beers, you allow the flavors and characteristics to further develop. Beers can become much more complex.
If you are thinking about starting your own cellar, there are some strict rules that should be followed. Unlike wine, even if the beer is corked, it should be stored upright to prevent disturbing sediment. Ideal temperature is between 50 and 60 degrees. Most importantly, temperature should remain steady. Big swings in temperature can wreak havoc on beer and wine alike. Beer should never be stored in sunlight. Bottles may allow UV rays to pass through. These UV rays can react with chemicals in the beer and cause "off" flavors. One of the most notable chemicals created by this reaction is the same chemical found in skunk spray which gives the beer a skunky flavor. For many people, the most cost-effective way to cellar beer and wine at home is usually by using a wine fridge.

Large-Scale Corporate Breweries
All beer lovers are familiar with the big "mega breweries" like Anheuser-Busch, Miller Coors and Pabst Brewing. These large brewers strive to produce a consistent, familiar, mass-produced product. Over the years, as craft beers grew in popularity, many of these large corporations have invested in, or bought out some of the larger craft breweries. That craft beer you liked may not actually be a craft beer after all. Brands like Redhook, Goose Island and Blue Moon are examples of craft breweries being bought out by larger corporations.
